For some reason cranberries remind me of Christmas. Why? Maybe it’s because of their bright red color or the desserts made with them. But whatever the reason, I’m glad them do so I have an excuse to bake with them during this holiday season! And today I made a Cranberry Apple crisp with a recipe from a friend.
The tartness of the cranberries and sweetness of the apples go hand-in-hand together. Add oats and you have a delicious crisp! Because the apples need to be peeled and chopped, this recipe may not be the fastest one out there, but it is delicious and great for this holiday season! So–what are you waiting for?
- 6 cups peeled and chopped apples
- 3 cups whole fresh cranberries, washed
- 1 cup white sugar
- 1 stick melted butter
- 3 cups old-fashioned oats
Preheat oven to 325F.
Combine the apples, cranberries, and sugar in a large bowl. Pour into a buttered baking pan (about 9×11 inch).
Mix together the butter and oatmeal. Pour over the apples and cranberries. Cover the pan with aluminum foil and bake for about 40minutes. Take off the foil and bake for an additional 10 minutes before taking the crisp out of the oven. Serve warm or cold (it’s delicious both ways!)
